Mizu-yokan (soft adzuki-bean jelly)

Nikko

Mizu-yokan (azuki red bean jelly) is Nikko’s winter sweet characterized by the feeling that the jelly glides easily down the throat and delicate sweetness. Because Mizu-yokan cannot be preserved for long time due to lack of refrigeration technology in old days, people used to eat it only in winter. Enjoy the taste of mizu-yokan that is cooked by bringing out characteristics of selected azuki beans and flavorful agar.
